Dreaming

While it is -8 degrees outside, the kids have had the last 3 days off of school, and Shaun just went out of town for the weekend, I needed a little reminder that the snow will melt, and there will be days that I wish it were cooler. Right now, I will just dream.
Here are some pics from our trip to Osage Beach last August. This is at the Lake of the Ozarks. We rented a pontoon boat for a half day and pulled the kids all over the lake on this tube. They had a blast! A thumbs up, meant go faster! I don't know if Eric ever put his thumb down! The water was really warm, so we spent some time anchored in a little cove so the kids could swim in the lake. It was a great little get away just before school started.

Recipe of the Day, Week, Month, or whenever I feel like changing it!

The kids and I took a trip to Half Moon Bay, CA in January to see the Mavericks surf contest and spend the weekend with my favorite Aunt Fay, Uncle Bob and Grandma! Aunt Fay made us the best buttermilk pancakes with homemade buttermilk syrup!

Buttermilk Pancakes
2 1/2 cups buttermilk
1 1/2 teaspoon baking soda
5 egg yolks
Combine above ingredients
Add:
2 1/4 cups flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon salt
6 Tablespoons oil
Beat 5 egg whites and fold into above mixture when griddle is ready.

Buttermilk Syrup
1 stick of butter
1 cup sugar
1/2 cup buttermilk
Add a pinch of salt. Bring to a boil. Remove from heat and add:
1/2 teaspoon baking soda
1 teasopoon vanilla
Stir and enjoy!

I made pancakes from a mix this morning for breakfast. Brittany asked if I had any of the good syrup. I said yes, because we have some strawberry syrup in the fridge right now. She was dissapointed to see that we in fact did not have any of the good syrup! She was hoping for the buttermilk kind! I guess I need to add buttermilk to the grocery list!
