6.5 weeks

I dressed Tyler in his "coming home from the hospital" outfit a couple of days ago. It is amazing how he has grown and changed so much in such a short time. He is putting on the pounds and I am taking them off! Lets see if he and I can keep that same trend the next 6 weeks!

Recipe of the Day, Week, Month, or whenever I feel like changing it!

The kids and I took a trip to Half Moon Bay, CA in January to see the Mavericks surf contest and spend the weekend with my favorite Aunt Fay, Uncle Bob and Grandma! Aunt Fay made us the best buttermilk pancakes with homemade buttermilk syrup!

Buttermilk Pancakes
2 1/2 cups buttermilk
1 1/2 teaspoon baking soda
5 egg yolks
Combine above ingredients
Add:
2 1/4 cups flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon salt
6 Tablespoons oil
Beat 5 egg whites and fold into above mixture when griddle is ready.

Buttermilk Syrup
1 stick of butter
1 cup sugar
1/2 cup buttermilk
Add a pinch of salt. Bring to a boil. Remove from heat and add:
1/2 teaspoon baking soda
1 teasopoon vanilla
Stir and enjoy!

I made pancakes from a mix this morning for breakfast. Brittany asked if I had any of the good syrup. I said yes, because we have some strawberry syrup in the fridge right now. She was dissapointed to see that we in fact did not have any of the good syrup! She was hoping for the buttermilk kind! I guess I need to add buttermilk to the grocery list!
