This is why we love living in Southern California...

We couldn't pass up 75 deg. weather and sunshine at the Oceanside beach! The kids and I went on Martin Luther King Day (Tyler's first time at the beach) and then we went again with Shaun, on Saturday. The water was too cold for me, but it didn't slow down my little beach bums who can't get enough of their favorite pastime, boogie boarding! Sadly, rain is in the forecast for this weekend.

My dad bought me a ticket with the conditions that I had to stay for two weeks! While it's really hard for me to leave Spencer, I couldn't pass it up!! SO, what are your plans for Presidents weekend?!?! YOu guys wanta drive up to Half Moon Bay?? :) I'm glad that at least I'll get to see Grandma, Aunt Fay and Uncle Bob for sure! Thanks for the invite to your blog.... we don't have a blog yet.... just facebook. It was so nice to see you guys out here!! We had so much fun hanging out with you and visiting!! Maybe we can come visit sometime when school isn't pressing on us so much! Someday! They says the third and fourth years of dental school aren't as bad. So we will have to make some time!

Recipe of the Day, Week, Month, or whenever I feel like changing it!

The kids and I took a trip to Half Moon Bay, CA in January to see the Mavericks surf contest and spend the weekend with my favorite Aunt Fay, Uncle Bob and Grandma! Aunt Fay made us the best buttermilk pancakes with homemade buttermilk syrup!

Buttermilk Pancakes
2 1/2 cups buttermilk
1 1/2 teaspoon baking soda
5 egg yolks
Combine above ingredients
Add:
2 1/4 cups flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon salt
6 Tablespoons oil
Beat 5 egg whites and fold into above mixture when griddle is ready.

Buttermilk Syrup
1 stick of butter
1 cup sugar
1/2 cup buttermilk
Add a pinch of salt. Bring to a boil. Remove from heat and add:
1/2 teaspoon baking soda
1 teasopoon vanilla
Stir and enjoy!

I made pancakes from a mix this morning for breakfast. Brittany asked if I had any of the good syrup. I said yes, because we have some strawberry syrup in the fridge right now. She was dissapointed to see that we in fact did not have any of the good syrup! She was hoping for the buttermilk kind! I guess I need to add buttermilk to the grocery list!
